BEERAKAYA GUTTI KURA / STUFFED RIDGE GOURD



INGREDIENTS REQUIRED :-

Ridge gourds : 1/4kg
Medium onion : 1
Dry red chillis :4
Ginger-garlic paste : 1tspn
Coriander seeds :1/2 tbspn
Cumin seeds:1/2 tspn
Sesame seeds : 2 tbspns
Grated jaggery : 1/2 tbspn
salt : to taste
Tamarind : lemon size
oil : 1tbspn

PREPARATION :-

  • Peelout the skin of ridge gourd and cut them into 2" pieces and put slits on them till 3/4th.

  • Heat a pan add 1tspn oil and fry coriander seeds , cumin seeds , red chillies , sesame seeds.

  • When it is cooled grind it and then add chopped onions , ginger garlic paste , jaggery , soaked tamarind and salt and grind to a smooth paste.

  • Now stuff this paste in each slit of ridge gourd.

  • Heat a pan add oil , When it is heated add this stuffed pieces and few curry leaves. If any remaining paste is there add it.

  • Put lid and cook it for 5 mins after every 5 mins takeout lid and turn them . Till all sides are fried nicely and finally ridge gourd should cook perfectly.

  • Serve hot with rice.
