INGREDIENTS REQUIRED :-
Green brinjals : 200gms
Oil : 2 tspns
Fennel powder : 1/2 tspn
Curry leaves : 1 strig
Onion : 1 big
Tomato :1
Ginger garlic paste : 1/2 tspn
Garam masala powder : 1/4 tspn
Turmeric : 1/4 tspn
Coriander powder : 1/4 tspn
Salt : 1/2 tspn
Green chilly : 5
Coconut : Small piece
Coriander leaves : 3 Strigs
PREPARATION :-
- Wash brinjals and drain the water.
- Chop Brinjals and put them in salt water , onion , tomato , greenchillies.
- Grind together 3 green chillies, 1/4 tspn fennel powder and coconut to a fine paste.
- Heat a pan add oil . When it is heated add 1/4 tspn fennel powder , curry leaves , chopped green brinjals , 1/4 tspn salt and fry them nicely.
- When they change their colour add chopped onion .
- When Onion is fried add tomato and ginger garlic paste. Mix well.
- When tomato is cooked add Garam masala powder , Turmeric , Coriander powder , 1/4tspn salt , 2 chopped green chilly. Mix well and fry them nicely.
- When oil separates add grinded paste and coriander leaves and mix well.
- Off the stove after 5 mins when coconut looses its rawness.
- Serve hot with rice.
