INGREDIENTS REQUIRED :
brinjals : 8
oil : 1 tbspn
fresh coconut : 3 tbspns
tamarind juice : 2 tbspns
salt : 1 1/2 tspn
cinnamon stick : 1 inch piece
cloves :2
onion :1
tomato :1
ginger garlic paste : 1/2 tspn
chilly powder : 1/4tspn
sugar : 1/4 th teaspoon
SET 1 :
mustard seeds : 1/4 tspn
cumin seeds: 1/2 tspn
uraddal : 2 tspns
bengal gram : 2 tspns
coriander seeds : 1 tspn
dry red chilly : 4
groundnuts : 1 hand ful.
PREPARATION :
- Heat a pan and add 2 tspns oil and fry all the ingredients in SET 1 in the same order
.
- When it is cooled grind it along with 1 tspn salt , grated coconut and 2 tspns tamarind juice.
- Now clean brinjals and cut them as "+" mark .
- stuff them with grinded paste.
- Heat a pan add remaining oil , add cinnamon stick , cloves , onion , ginger garlic paste tomato. when it is fully boiled add 1/2 tspn salt , chilly powder , sugar , remaining tamarind juice, remaining grinded paste and mix well.
- After 2 mins add stuffed brinjals and little coriander leaves , water for required consistency and mix well.
- After 2 or 3 boils put this bowl in cooker and give 1 whistle and switchoff the stove.
- ur tasty stuffed brinjal curry is ready to serve with rice / rotis.
